INGREDIENTS
- 1/4 avocado, peeled, mashed
- 1 tsp lemon juice
- 2 slices Coles Traditional High Top Wholemeal Bread or Coles High Fibre White Sandwich Bread
- ½ Lebanese cucumber,
- thinly sliced
- 1 iceberg lettuce leaf, shredded
- 80g Coles Shredded Roast Chicken Breast
- 1/4 cup alfalfa sprouts
- 1 tbs mayonnaise
METHOD
- Step 1: Combine the avocado and lemon juice in a small bowl.
- Step 2: Spread 1 slice of bread with avocado mixture. Top with the cucumber, lettuce, chicken, alfalfa sprouts, mayonnaise and remaining bread. Cut in half.
